Honey Dijon vinaigrette
What did the vinaigrette say to the refrigerator? 
Close the door, I’m dressing. 
Ingredients
- 2/3 cup of olive oil 
- 1/3 cup apple cider vinegar (or white wine vinegar) 
- 1 tbsp of dijon 
- 1 tbsp raw honey 
- 1/2 tsp salt 
- 1/4 tsp pepper 
- 1 tbsp minced shallot/green onion/chives/garlic (or a combination) 
Instructions
- add oil, vinegar, dijon, and honey to a jar 
- mix vigorously with a whisk to emulsify. You can also use an immersion blender or, in the pictured recipe, I used a latte frother. A lid on the jar and enthusiastic shaking will also get it done. 
- add salt, pepper, & shallots 
- stir & enjoy
