Toasted rice
If you are tired of plain rice and want to add some depth to it, try toasting it first. This gives it a warm, nutty flavour. After it toasts, you can add your liquid and additional vegetables and meat and cook it together. It’s a great way to use up leftovers. In the picture above, I used jasmine rice, bone broth, frozen vegetables (broccoli, cauliflower, carrots) and when it was done I grated some cheese on top.
Ingredients (for two)
- 1 cup long, grain white rice
- 2 cups water or broth
- 1/2 tsp salt
- (opt) pepper — to taste
- (opt) 2 cups vegetables — frozen, fresh, or leftovers
- (opt) 1 cup cut up, leftover meat
- (opt) 1/2 cup grated cheese

- simmer for 15 to 20 minutes until rice is cooked
- (opt) sprinkle with grated cheese while hot
