Cheese & Black Bean Quesadilla

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup cooked black beans, drained and rinsed
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil or butter, for cooking
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Place one tortilla in the skillet, sprinkle with cheese, black beans, bell pepper, and cilantro.
  3. Top with a second tortilla and cook until the bottom is golden and cheese begins to melt, about 3-4 minutes.
  4. Carefully flip the quesadilla and cook the other side until golden and cheese is fully melted.
  5. Remove from skillet, cut into wedges, and serve warm.
