Italian Wedding Soup: A Hearty and Classic Comfort Bowl
Ingredients
- 1 lb ground beef or a mix of beef and pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 cup small pasta (like acini di pepe or orzo)
- 2 cups chopped escarole or spinach
- Salt and pepper to taste
Instructions
- In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, and garlic. Form into small meatballs.
- Bring chicken broth to a boil in a large pot. Add meatballs and cook for 10 minutes.
- Add pasta and cook until tender, about 7 minutes.
- Stir in greens and cook 3–5 minutes until wilted.
- Season with salt and pepper. Serve hot with extra Parmesan.
Chef’s Note: The name “Italian Wedding Soup” actually refers to the “marriage” of flavours between meat and greens, not a wedding celebration. This hearty soup has been a comfort staple since its origins in Southern Italy.
