Italian Wedding Soup: A Hearty and Classic Comfort Bowl

Ingredients

  • 1 lb ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup small pasta (like acini di pepe or orzo)
  • 2 cups chopped escarole or spinach
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, and garlic. Form into small meatballs.
  2. Bring chicken broth to a boil in a large pot. Add meatballs and cook for 10 minutes.
  3. Add pasta and cook until tender, about 7 minutes.
  4. Stir in greens and cook 3–5 minutes until wilted.
  5. Season with salt and pepper. Serve hot with extra Parmesan.
Chef’s Note: The name “Italian Wedding Soup” actually refers to the “marriage” of flavours between meat and greens, not a wedding celebration. This hearty soup has been a comfort staple since its origins in Southern Italy.
